There's really not much need for me to add anything here - Guinness is a spiritually beautiful thing - in all it's many and wonderous forms.

I've decided that Dark Beers/Ales rule. I've got a hankering for some enchiladas and I'm going to work on a recipe for them that includes a queso sauce made with Negra Modelo - another of life's lovely treasures. If it works (I am not a cook. I love to eat and I like to learn and experiment so I often embark into the kitchen armed only with a day full of watching inspirational Food Network Television. They inspire the hell out of me. Alton, Emeril, Giada, Rachel, Tyler, Ina, Mario, that Top 5 guy, Iron Chefs both old and new [I am very happy that Masaharu Morimoto came over to Iron Chef USA. He was always one of my favorites.] - even goofy Marc Summers double dares me to try new things.) - I say, If It Works, I will happily share the results here. Stay tuned.
